Soups On

My daughter said her garden is over run with Squash And the neighbors
want open the door anymore. So today I am making this Squash Season Soup.
 2 tablespoons olive oil
1 large onion, sliced
1 pound yellow squash and /or zucchini, sliced
1 head garlic, peeled and chopped
5 cups chicken stock
1 teaspoon seasoning
I put crushed red pepper and some lemon pepper.

Saute onions,squash/zucchini, and garlic in a large skillet in olive oil.
Add the chicken stock and simmer until the vegetables are tender.
Transfer mix to a large blender-blend in ,or use a food processor.
Blend until smooth
A little shredded cheese or crumbled some bacon on top.
Add Potatoes or chicken .
Enjoy!

Certainly does look good. I love squash soup. However I've never grown squash.
