Cake Pie

" Chickens In The Road" had this Lemon cake pie on her site for Easter. I made this for The Bennie and he sure did like it.

I was thinking it may be good with chocolate and it was. The cake is on top and the pie on the bottom.How to make Lemon cake pie
1: cup sugar

1/3 cup all-purpose flour

3 tablespoons butter, melted

1/4 teaspoon salt

2 eggs, separated

2 tablespoons lemon juice

1 teaspoon lemon peel, grated

1 cup milk

one unbaked single-pie shell (I used the deep pie shell)

Combine sugar, flour, butter, and egg yolks in a mixing bowl. Beat. The mixture will be a little crumbly at this point. Add lemon juice, grated peel, and milk.

Beat again. Beat egg whites till soft peaks from. Fold into mixture. Pour filling into prepared pie shell.

Bake at 350-degrees for 40-45 minutes (or until set-do the toothpick test!). Cool. Chill to store.

To make the chocolate (leave out the lemon juice and peel ) add 1 cup melted chocolate chips.
